Amaretto Chicken
2 Tblsp flour 1 Tblsp oil
1/2 tsp salt 2 Tblsp butter
1 tsp pepper 1 Tblsp Dijon mustard
1 1/2 tsp paprika 1/2 cup frozen orange juice concentrate
1 tsp garlic salt 1/4 cup water
6 boneless chicken breast halves 2/3 cup Amaretto
Combine flour, salt, pepper, paprika and garlic salt. Shake chicken in this mixture. Saute chicken in oil until brown and remove to casserole. Increase skillet heat to medium heat. Melt butter; add mustard, orange juice, water and Amaretto. Stir constantly until liquid is reduced. Pour sauce over chicken and bake, covered, at 350 degrees for 45 minutes.
