Lemon Loaf
1/2 cup shortening 1 1/2 cups flour
1 cup sugar 1/2 tsp salt
2 eggs 1 tsp baking powder
Grated rind of 1 lemon 1/2 cup milk
Glaze:
Juice of 1/2 lemon 1/4 cup sugar
Cream shortening; beat in sugar gradually. Add eggs and beat well; stir in rind. Blend in dry ingredients and add alternately with milk, mixing well. Bake in a greased loaf pan in a 350 degree oven, 50-60 minutes. Mix glaze and spread over top immediately. Let cool 10 minutes. Remove from pan and cool completely before slicing.
