8 large lemons 2 cups water
2 cups sugar
Soften lemons by rolling on counter then micro waving on high for 1 minute. Remove lemon zest from each lemon. Combine sugar and water in medium saucepan over medium heat. Stir constantly until boiling; reduce heat slightly. Add lemon rind and cover the saucepan. Boil the syrup for 4 minutes then strain, discarding lemon rind. Cool thoroughly. Juice lemons; strain into syrup and stir well. Store covered in refrigerator. To make up: mix 1 part syrup to 2 parts cold water. Serve over ice.
